a’Mare is seeking experienced Sommeliers and Wine Waiters to join our award-winning team.

This is a rare opportunity to work in one of Sydney’s most prestigious restaurants, renowned for its luxury Italian dining, impeccable service, and extensive wine program.

Since opening in 2020 under the direction of Alessandro Pavoni, a’Mare has received multiple accolades, including Best New Wine List at the 2021 Australia’s Wine List of the Year Awards.

The role will be casual to start with. Full time offered to the right candidate.

What You’ll Do

  • Recommend and serve wines using appropriate glassware and service techniques
  • Provide confident and knowledgeable food and wine pairing advice, with a focus on Italian cuisine
  • Engage guests with a warm, professional and educational approach to wine
  • Collaborate with the Head Sommelier on stock control and wastage reporting
  • Share wine knowledge with the front-of-house team to elevate overall service standards
  • Maintain exceptional presentation and service throughout each shift

Essential Requirements

  • Full Australian working rights
  • Current NSW RSA Certificate
  • Strong knowledge of wine and food pairing, particularly Italian, French and Australian wines
  • Excellent spoken English and communication skills
  • Hospitality qualification (Diploma) or 1–3 years’ experience in a sommelier or wine-focused role
  • Minimum of 1 year experience in a sommelier or wine-focused role is required
  • WSET Level 2 (or equivalent) highly regarded
  • A team-focused, guest-first mindset
  • Impeccable grooming and presentation
