The Role

As Head Chef, you’ll lead the kitchen team to deliver consistent, high-quality pub food in a fast-paced environment. This permanent full-time role offers the chance to shape operations at a Glebe icon. Key Responsibilities

  • Develop and execute menus suited to pub dining and events.
  • Oversee all kitchen operations, ensuring compliance with health, safety, and hygiene standards.
  • Manage, train, and develop kitchen staff for efficient service.
  • Monitor food quality, presentation, and costs—hit inventory and GP targets.
  • Collaborate with management on promotions, functions, and peak trading.
  • Maintain a clean, safe, and organised kitchen.

What We’re Looking For

  • 3+ years as Head Chef or Sous in busy pub/hotel environments.
  • Cert III/IV Commercial Cookery or completed apprenticeship.
  • Proven leadership in high-volume kitchens.
  • Food Safety Supervisor certificate.
  • Strong cost control, multitasking, and team-building skills.
  • Passion for quality hospitality in a traditional pub setting.
