WHY THE TRAINING RAMP MATTERS
Most openings hire in October and open in November with a team that has never worked together.
We are not doing that. Every Aqua hire trains inside a live SRG venue first – Ripples, Sails, The Nielsen, Ventuno, The Fenwick, Riva. You will learn SevenRooms, our service sequence and our standards, and you will already know the people beside you.
By November this will not be a new team. It will be a trained team walking into a new room.

THE LOCATION
Milsons Point. Harbour Bridge on one shoulder, Luna Park on the other, Opera House across the water, floor-to-ceiling glass on three sides.
There are maybe five dining rooms in this city with a view like this, and none of them are hiring an entire floor team at once.
Aqua is the address people book when the occasion actually matters — the proposal, the anniversary, the deal. That means the guests are invested, the standard is high, and the service you learn here is the service that opens doors everywhere else. “Aqua Dining, opening team” is a line on your CV that Sydney operators recognise instantly.

Bill and Kathleen Drakopoulos opened Aqua in 2000. Everything else came after.
