Sous Chef

We are currently seeking for a Sous Chef. This role offers a balance of hands‑on preparation of high‑quality dishes and operational responsibility for supervising and directing all kitchen personnel.

In this role, you will be responsible for:

• Utilising the staff and resources available, organise and facilitate the highest possible standards of food service.
• Creates and costs menu items within guidelines established by the Executive Chef whilst keeping in line with current trends.
• Actively promotes specialty dishes based on ingredients and/or season.
• Use local produce where available to create innovative menus.
• Encourage clear communication lines and forums between all personnel.
• Train and mentor line staff including Apprentices and Trainees.

To be successful in this role, you must have:

• Successfully completed a trade qualification in commercial cookery.
• Previous experience in a fine dining, resort/hotel based restaurant.
• Previous experience in a supervisory role, preferably at Sous level.
• Strong interpersonal and communication skills.
• Must have thorough knowledge of security, health and safety requirements in a commercial kitchen environment.
