We have an exciting opportunity for a Sous Chef to join our Food & Beverage Department on a full-time permanent basis, located at Caulfield Racecourse.

In this role, you’ll support the delivery of consistently high-quality food across all MRC venues. You’ll help lead kitchen operations, support the team, and ensure every dish meets our high standards for quality, presentation and service.

In The Saddle

  • Bring menus to life by preparing, cooking and presenting high-quality, well-presented dishes 
  • Keep standards high across quality, consistency and presentation
  • Ensure food safety and compliance requirements are met 
  • Monitor food and labour costs, supporting budget and waste control initiatives 
  • Oversee stock receiving, storage and kitchen organisation 
  • Contribute to menu development, including race day and function offerings
  • Supporting and mentoring the team with rostering, training and day-to-day leadership


Your Track Record

  • Experience as a Sous Chef or similar, ideally in high-volume function environment
  • Certificate III in Commercial Cookery (or equivalent)
  • Current Food Handler and First Aid certifications
  • Strong communication skills with the ability to engage and influence others
  • Highly organised with the ability to manage competing priorities
  • A sharp eye for detail and a passion for quality
  • A team player with a proactive, hands-on approach
  • Full Australian working rights
