The Opportunity

We are seeking a highly motivated and passionate Food & Beverage Manager to join our leadership team. This is an exceptional opportunity for an ambitious hospitality professional to accelerate their career within a Luxury Collection property.

As a key member of hotel leadership, you will oversee all Food & Beverage operations across Peppina, Mary Mary , Deco Lounge, and In‑Room Dining. You will partner closely with department leaders to drive exceptional guest experiences, uphold brand standards, support team engagement, and maximise financial performance across all venues.

Our Venues

Peppina – Our signature restaurant, celebrating Tasmanian produce and Italian heritage through a seasonal menu curated by Culinary Director Massimo Mele.
Deco Lounge – A versatile indoor/outdoor space offering all‑day dining, high tea, and quality beverages that focus on accessibility and value.
Mary Mary – A premium bar experience featuring a nationally recognized spirits and cocktail program, complemented by a curated wine list and creative bar snacks.
In‑Room Dining & Minibar – Elevated beverage and culinary offerings designed to enhance the guest experience with quality storytelling and refined presentation.

Core Responsibilities

Leading the Team

  • Oversee day‑to‑day operations across all F&B outlets.
  • Lead from the front with strong communication, integrity, and a focus on teamwork.
  • Foster a culture of motivation, empowerment, and continuous improvement.
  • Provide coaching and support to team members, ensuring productivity and performance standards are achieved.

Setting the Standards

  • Uphold and embody Luxury Collection service culture.
  • Ensure consistent delivery of brand standards and exceptional guest experiences.
  • Resolve guest concerns with ownership and care.
  • Drive quality, consistency, and ongoing skills development.

Employee Engagement

  • Promote a fair, respectful, and inclusive workplace.
  • Communicate regularly through briefings and one‑on‑one discussions.
  • Encourage innovation and incorporate guest insights into operational improvements.
  • Set clear performance goals and support team success.
  • Champion brand initiatives and business improvements.

Qualifications

  • Responsible Service of Alcohol (RSA) – Essential
  • Current Driver Licence – Required
  • Current First Aid & CPR Certifications – Required
