Located on King Street Wharf, only a short walk from Barangaroo, the CBD and ICC, the hotel offers 114 spacious studios and apartments designed to give guests comfort, flexibility, and space to stay their own way.Introducing Shoreline Kitchen.At the heart of the hotel sits Shoreline Kitchen, a new all day dining concept open to guests and locals alike. A warm, relaxed space designed to feel like a gentle exhale: where mornings linger over a generous seasonal breakfast, afternoons move through fresh produce driven menus, and evenings ease into drinks worth staying for. This is the space you’ll own, front to back, open to close. About the roleAs Food & Beverage Manager, you’ll have full operational and commercial ownership of Shoreline Kitchen. You’ll spearhead the pre-opening build, shaping culture, assembling your team and setting the standard, from day one.You’ll work closely with the Hotel General Manager and Executive Chef, with the Food & Beverage team reporting directly to you. You’ll be the central leader: hands-on, guest-facing, and always close to the action.What you’ll be doingLeading from the floor: With a genuine hands-on style, you lead by example; from jumping in to make coffee, serving plates, taking orders and greeting guests. Your team follows your lead: immaculate presentation, a dining area always maintained to the highest standard, and a consistency in quality that can’t be faulted.Driving commercial performance: You’ll set financial forecasts and budgets in partnership with the General Manager and Finance, review revenue and expenses, manage food costs with the Executive Chef, complete monthly stock takes and wastage reports, and hit your numbers without losing sight of the guest experience.Keeping operations tight: From rosters and coverage to budget variances and seasonal activity, you stay across it all. Efficiency and consistency are your baseline, not your ceiling.Running a standout program: You’ll liaise with Sales & Marketing to identify, execute and implement promotions, strategies and special events. You’re always reading the local market and current trends to ensure the offering drives footfall and continual growth.Building the team: You’ll mentor and inspire a team of passionate professionals, creating a culture of excellence, inclusivity and warmth. You bring people up with you.What you’ll bringYou’re a natural leader with a love for hospitality and a flair for managing complexity, as comfortable with a P&L as you are on the floor at peak service. You care about the guest experience as much as the numbers behind it, and you bring the same energy to a quiet day as you do to a full house.Proven senior F&B leadership experience in hotels, or similar fast-paced venuesA track record of building and leading high-performing teamsStrong financial acumen, commercial savvy, and experience managing food costs and budgetsPrevious experience with food and beverage pairing along with menu engineering.
