Adina Sydney Darling Harbour is reopening following a full refurbishment, a premium apartment hotel in one of Sydney’s most vibrant waterfront locations.
Located on King Street Wharf, only a short walk from Barangaroo, the CBD and ICC, the hotel offers 114 spacious studios and apartments designed to give guests comfort, flexibility, and space to stay their own way.

Introducing Shoreline Kitchen.
At the heart of the hotel sits Shoreline Kitchen, a new all-day dining concept open to guests and locals alike. A warm, relaxed space designed to feel like a gentle exhale: where mornings linger over a generous seasonal breakfast, afternoons move through fresh, produce-driven menus, and evenings ease into drinks worth staying for. Ethically sourced coffee, premium local ingredients, a menu that shifts with the seasons and a space that feels alive yet unhurried from open to close.
About the role
As Executive Chef, you’ll have full creative and operational ownership of Shoreline Kitchen. You’ll bring this brand new concept to life from the ground up, designing the menus, building the team, managing the numbers, and being the person who makes every service feel considered and alive.
You’ll work closely with the Hotel General Manager to bring the concept to life, with the support of an experienced hospitality group behind you and the freedom to make the restaurant genuinely your own.
What you’ll be doing
Owning the menus: You’ll design and deliver the full Shoreline Kitchen menu from scratch. Mornings anchor around an exceptional breakfast; think free-range eggs, sourdough, buttermilk hotcakes, house-made granola and hot smoked salmon. Through the day, fresh salads, signature sandwiches and hearty mains. Come evening, a lighter, drinks-led menu that brings things down a gear. You’ll have a genuine say in what this becomes.
Leading the kitchen: You’ll run the kitchen with a hands-on presence, setting the standard, holding it, and making sure every service reflects the concept at its best.
Running a standout events program: From private functions to conferences and large-scale occasions, you’ll lead the culinary side of events, ensuring seamless execution and a guest experience that lingers long after the last course.
Driving the business side: Budgeting, supplier relationships, systems, processes, policies and procedures - you’re across all of it. You know that a great kitchen runs on great foundations.
Building the team: You’ll lead, mentor and inspire a diverse, high-performing kitchen team. You bring people up with you, and you build a culture where great work is the norm.
About you
You’re an experienced Executive Chef who thrives on creativity, scale and leadership, as comfortable in a creative brief as you are in a P&L conversation, and you bring the same attention to detail to both. You know how to lead a kitchen that serves everyone from early rising hotel guests to neighbourhood locals, and you care about the experience as much as the food.
You’ll ideally bring:
Extensive senior leadership experience in award winning restaurants, luxury hotels or premium restaurant operations
A produce driven, contemporary food philosophy with a strong eye for detail and originality
A proven track record of building and retaining exceptional kitchen teams
Strong financial acumen and operational management skills, including HACCP and food safety practices
A genuine guest first mindset, crafting menus and experiences that resonate with both locals and international travellers
