The Role
What you will do:
Oversee daily operations and team performance in the absence of the Restaurant and Bar Manager
Lead from the front with a hands‑on approach across service, bar and guest interactions
Ensure smooth day-to-day operations with a hands-on approach
Maintain high standards of presentation across staff, dining areas and the bar
Create efficient, cost‑effective rosters and assist with budgeting and forecasting
Oversee stock control, monthly stocktakes and wastage reporting
Manage stock control, bar set-up/pack-down, and maintain service standards
Maintain strong product knowledge and share insights with the team
Coach, train and develop team members, supporting recruitment and performance management
What We’re Looking For
3+ years’ experience in food and beverage at supervisory level, luxury hotel, or premium restaurant or bar.
Strong leadership skills with the ability to inspire, motivate and guide a small team
Excellent customer service and communication skills (written, verbal and active listening)
Knowledge of stock control, cash handling, COGS and POS systems
A good understanding of food and wine pairing
Ability to thrive under pressure and solve problems quickly
Someone who thrives in a buzzing, high-energy environment
Flexibility to work evenings and weekends
A natural host who loves creating memorable guest experiences
A current Responsible Service of Alcohol (RSA)
