Purpose
As Chef de Partie, you will play a key role in delivering consistent, high-quality food across multiple outlets. Working closely with the wider kitchen brigade, you will contribute to service delivery, team development, and the ongoing evolution of our food offering.
Primary Responsibilities
Manage your section efficiently across varying service styles and outlets
Support service across Republic Tavern, Trader Restaurant, and Conference & Events as operationally required
Take ownership at the pass when required, ensuring quality, consistency, and timely service
Maintain strong control of food cost, waste management, and labour within your section
Deliver consistently high-quality, well-presented dishes aligned with brand and venue standards
Train, mentor, and support junior team members across the kitchen brigade
Maintain a clean, safe, and compliant kitchen environment with a strong focus on food safety
Skills & Experience
Previous experience as a Demi Chef or Chef de Partie in a professional kitchen
Experience working across multiple service styles or high-volume environments highly regarded
Strong understanding of HACCP, food safety, and compliance standards
A leadership mindset with a passion for developing junior chefs
Certificate in Commercial Cookery (required) and Food Safety certification (preferred)
Strong organisational and time management skills across prep, service, and cost control
Flexibility to work across a rotating roster including mornings, evenings, weekends, and public holidays
