We are seeking a dedicated Sushi Chef de Partie to join our culinary team and contribute to our reputation for excellence.

Location: Casula, NSW

Job Summary: As a Sushi Chef de Partie, you will own your section of the kitchen (roll, nigiri, or back kitchen) and be responsible for preparing and presenting sushi dishes with precision and flair. You will work under the direction of the Head Chef and Sous Chef to ensure that each dish meets our high standards for quality, consistency, and presentation. This role requires a strong understanding of sushi preparation techniques, attention to detail, and a passion for delivering a memorable dining experience.

Requirements:

• a strong commitment to food safety and sanitation protocols
• handle multiple orders at once without compromising on quality
• excellent knife skills
• manage inventory, order supplies, and rotate stock on a FIFO basis
• follow recipes and portion specs precisely, to protect food cost and consistency
• set up and maintain mise en place for your station ahead of service
• monitor and record food quality and safety checks, including rice pH and temperature logs
• monitor and maintain kitchen equipment
• train and support kitchen hands
• cook and serve food while coordinating with other kitchen staff and floor staff (strong communication skills essential)
• prepare ingredients (chopping, slicing, marinating, frying, boiling)
• flag any quality, stock, or equipment issues promptly to the Head Chef

Job Type:

• Full time at 40 hours per week, must be available to work weekends
