What We Expect of You

  • A current Victorian RSA, full-time availability and valid Australian working rights is essential. Sponsorship is not offered for this role
  • Minimum 3 years' experience as in a F&B Leadership role with an international luxury hotel chain, with demonstrated success managing multiple F&B concepts and operations.
  • Technical knowledge of drinks including: Wine, spirits, cocktails, beer, sake, Japanese whisky, champagne, non-alcoholic beverages, and more
  • Operational skills including: Cocktail preparation, wine service, stock control
  • Knowledge and understanding of financial knowledge, such as inventory, costs, expenses, and all cash handling procedures and policies
  • Driven for Results; setting high standards of performance for self and others; assumes responsibility for work objectives; initiating and monitoring progress towards accomplishment goals; proactively acts and goes above and beyond
  • Proven track record in revenue optimization and P&L management, with ability to analyse financial data to implement strategic improvements and increase departmental profitability
  • Strong leadership qualities with experience developing and mentoring diverse teams, implementing training programs, and fostering a culture of excellence in guest service
  • Expert knowledge of food and beverage trends, innovative menu development, and premium wine/spirits curation specific to the Australian luxury hospitality market, supported by relevant industry certifications 
  • Experience working with Brand standards and Luxury Quality audits
  • Confidence engaging with guests, and leading and working as part of a team
  • Embody a polished professionalism with an audacious approach to creativity; and to be a playful individual who is passionate in creating memorable guest experiences

A Glance at What You Will Do

The Beverage Manager is responsible for the strategic and operational leadership of the beverage function across W Melbourne, driving beverage revenue, profitability, innovation and service excellence across all hotel venues and beverage touchpoints. 

  • Develop and execute a hotel-wide beverage strategy that maximises revenue and delivers distinctive beverage experiences aligned to the individual identity of each venue. 
  • The role is commercially focused and highly guest-facing, combining revenue generation, beverage innovation, cost management, inventory control, supplier relationships, training and staff development
  • Ensure that beverage is treated as a significant commercial driver of the hotel's overall F&B performance, rather than simply an operational support function
  • Establish menu development processes including: Concept, Recipe development, Costing, Pricing, Testing, Photography, Menu design, Staff training, Launch
  • Work with the Food and Beverage leadership team to determine areas of concern and develop strategies to improve the department's financial performance
  • Drive innovation by staying ahead of market trends and introducing new F&B experiences
  • Build strong relationships with key beverage suppliers and distributors, negotiatinh pricing, rebates, incentives and commercial agreements
  • Engage, mentor, and inspire your team to deliver exceptional service and elevate the guest experience
