At The Apollo, we’ve spent over a decade shaping what modern dining in Sydney looks like. It’s Greek at heart, but not traditional. Big flavours, open spaces, music up, plates moving, people staying longer than they planned.

We’re part of The Apollo Restaurant Group, a collection of restaurants across Sydney, Brisbane and Tokyo, all built around the same idea: hospitality should feel generous, energetic and genuinely fun. Right now, we’re looking for bartenders and section waiters to join the floor.

What it’s like working here

You’re in the middle of it. Full sections, big energy, constant flow.
As a section waiter, you’ll own your tables. Not just taking orders, but setting the tone, reading the room, knowing when to step in and when to hang back.
Behind the bar, it’s fast and tight. You’re part of the rhythm of the restaurant, not separate from it. It’s a team that backs each other. No one’s standing around waiting to be told what to do.

What we’re looking for

• Experience in a fast-paced restaurant or bar
• Confidence running a section or working a busy service
• Strong communication, both with guests and your team
• Someone who stays level when things get hectic
• A real interest in hospitality, food and wine
