Opening soon at the Roslyn Packer Theatre in Walsh Bay, this moody, late-night cocktail bar is designed for the pre- and post-theatre crowd (and anyone who wants to linger long after curtain call). It will be a destination for martinis before the show, Champagne after, late-night snacks, and a program of music and events that keeps the room alive when the stage is dark. 

We’re looking for a Bar Manager to bring the venue to life and lead its launch from the ground up. This is a rare pre-opening opportunity to shape the drinks program, build and inspire a skilled team, and set the tone for a venue designed to become a mainstay of Sydney’s cultural precinct.

What You’ll Be Doing: 

  • Designing and executing a creative drinks program that defines the venue's identity 

  • Leading daily bar operations with confidence, professionalism, and warmth 

  • Recruiting, training, and inspiring a passionate team to deliver standout service 

  • Driving a positive, performance-driven culture that values fun and professionalism 

  • Managing stock, ordering, and cost controls to keep the business strong 

  • Collaborating with theatre and events teams to create memorable guest experiences 

What We’re Looking For: 

  • A seasoned hospitality professional with 3–5 years’ experience in cocktail bars or late-night venues 

  • Strong knowledge of spirits, cocktails, wine, and bar trends — with the creativity to innovate 

  • A natural leader who thrives in a high-energy, guest-focused environment 

  • Operational smarts: stock control, compliance, rostering, and cost management 

  • Calm under pressure, proactive, and an excellent communicator 

  • RSA certification (essential)
