About This Opportunity  

This is an excellent opportunity for an enthusiastic Cook to join our culinary team at join the professional team at the award-winning Customs House, in the heart of Brisbane City. This position assists the Customs House kitchen team servicing Patina at Customs House and internal and external event catering.

Patina at Customs House is a modern and contemporary restaurant offering relaxed dining with an emphasis on paddock to plate philosophy, Patina offers a unique shared dining experience overlooking the Brisbane River. The restaurant is located within Customs House which is one of Brisbane's heritage icons also includes private event spaces and the kitchen will cater to events both on and offsite.

Staff are required to fulfil 38 hours per week across a seven-day roster including weekends and evenings.   

Duties and responsibilities include, but are not limited to:

  • Maintain a high standard of food production within Customs House and for outside catering.

  • Adhere to relevant recipes when preparing food.

  • Maintain a responsible use of kitchen equipment and hygienic and tidy work area.

  • Follow all requirements in maintaining the Food Safety Plan.

  • Assist in training and supervision of kitchen hands.

  • Receive goods, storage, and stock rotation, and inform the chef in charge of stock requirements where necessary.

  • Assist with stock take, and record temperatures of incoming stock, cold rooms and refrigerators where required.

  • Maintenance of mise en place for restaurant and function.

About You  

  • Minimum of 2 years’ experience in a similar role.

  • Strong knowledge of the production of a la carte and banquet foods and kitchen procedures and operations.

  • A genuine interest in and knowledge of food and current trends.

  • Excellent organisational skills.

  • Well-developed communication and interpersonal skills, with a customer driven focus.

  • Knowledge of general kitchen health and safety procedures, and HACCP and BCC procedures regarding food, health and safety.

  • High standard of personal hygiene.

The successful candidate may be required to complete a number of pre-employment checks, including: right to work in Australia.
