The role

Crown is the ultimate destination for dining experiences, from vibrant casual to premium settings. Merrywell is one of our busiest outlets, serving large volumes of guests while maintaining exceptional standards.

We’re seeking an enthusiastic, resilient, and hands‑on Chef de Cuisine to lead the Merrywell back‑of‑house team. You’ll set the pace in a fast‑moving, high‑pressure environment, inspiring your brigade to deliver consistently outstanding food and service.

In this role, you will:

  • Lead from the front—set a clear vision, energise the team, and uphold a high‑performance culture in peak trading periods.
  • Create modern menus and deliver outstanding, premium dishes aligned to the outlet concept.
  • Run the pass under pressure—maintain composure and quality during sustained high‑volume service.
  • Own kitchen operations—oversee financials, headcount, stock, and roster optimisation to meet profitability targets.
  • Drive efficiency—streamline prep, service and recovery to ensure effective outlet management.
  • Coach and develop—mentor chefs at all levels, build capability, and nurture future leaders.
  • Champion safety & compliance—adhere to all Crown safety policies and HACCP standards.
  • Maintain consistency—ensure high quality and presentation standards, every service, every plate.
  • Delegate decisively—assign the right tasks to the right people and follow through on outcomes.

About you

You’re a calm, strategic leader who thrives when the stakes are high and the docket rail is full. You bring:

  • Proven success as a Chef de Cuisine leading daily operations in a premium dining environment.
  • A track record managing high‑volume service without compromising quality or guest experience.
  • Commercial acumen—budget ownership and cost control to achieve profitability targets.
  • Expert HACCP and food safety knowledge with impeccable compliance habits.
  • Organisational and communication strengths to manage rosters, stakeholders, and cross‑functional teamwork.
  • Passion for culinary excellence—creating memorable, modern dishes and elevating the guest experience.

Qualifications

Certificate 3 & 4 in Commercial Cookery
