Assistant Food & Beverage Manager – Hotel Indigo Melbourne Little Collins and Holiday Inn Melbourne Bourke Street Mall

One of Melbourne’s most iconic CBD arcades has been reimagined with the redevelopment of "Melbourne Walk," now home to IHG’s first Australian dual-branded hotel project. 

Open the door into Hotel Indigo, and guests can expect local character, modern design and warm, professional service with a vibrant and individual flavour, bringing the edgy laneway neighbourhood of Little Collins Street to life. Making the most of the retail haven, Holiday Inn will offer a modern, fresh and friendly stay for a wide variety of guests coming to enjoy the convenience and value they know and love from Holiday Inn, and all that Bourke Street Mall has to offer. 

At Hotel Indigo, guests can dine at Fern Bar & Dining, a European bar-led eatery inspired by the character and charm of the local neighbourhood, while the Holiday Inn, The Greenery offers an inviting All Day Dining experience in its open lobby. Both venues are supported by a single, centrally located kitchen that will serve up unforgettable dishes – anytime, anywhere our guests choose to dine. To bring this to life, we’re currently searching for an Assistant Food & Beverage Manager to partner with the F&B Manager and the rest of the F&B leadership team.

 

A little taste of your day-to-day 

  • Support to implementing standard operating procedures (SOPs) for the food & beverage department, including service standards, food handling protocols, sanitation procedures, and customer service guidelines.
  • Support the training and development of food & beverage team including supervisors, waitstaff and bar attendants. 
  • Collaborate closely with other departments, such as kitchen, events, and front office, to ensure seamless operations, communicating F&B needs and requirements effectively to other teams.
  • Manage day-to-day staffing needs, plan and assign work and establish performance and development goals for team members. Provide mentoring, coaching and regular feedback.
  • Leading & driving service in the outlets, be hands on with the team to maximize guest satisfaction each day.
  • Work with F&B Manager on development and implementation of revenue generating strategies in both F&B outlets.
  • Ensure guest arrival experience, manage guest complaints to drive improvement in guest satisfaction. 
  • Ensuring that all food and beverage operations comply with relevant health, safety, and sanitation regulations, obtaining necessary permits and licenses and conducting regular inspections to maintain compliance.
  • Coordinate regular stocktakes of food, beverages, equipment and/or linen. Regularly review and report inventory figures to senior management and order accordingly. 
     

What we need from you 

  • At least 2 years of related experience, including management experience.
  • Bachelor’s degree / higher education qualification in Hotel Management, culinary arts, or related field preferred. 
  • Valid Victorian RSA and Food Safety Certificate, as required by local law.
  • A demonstrated capability of collaborating with multiple stakeholders and managing competing priorities.
  • Excellent Communication skills – guest will need to come to you with concerns as well as compliments, so you’ll be easy to talk to
  • Your problem solving skills will turn issues into opportunities so every guests leaves with great memories
  • Strategic thinking, the ability to explore new ways of working and have an open mind around how we can drive the Hotel forward.
